It just wouldn’t be Christmas without the classic rum balls sitting on the table.  These are so simple, so easy and so delicious that you will find it hard to believe that they are healthy… But they are and I promise you they taste good!  The lack of leftovers whenever these have been made over the last couple of years seems to confirm this.

Ingredients:

1 cup almond meal

1 Cup Medjool Dates (pitted)

1/2 Cup Shredded Coconut

2 tbsp Coconut Oil

1/2 cup Cacao

1 Shot Rum

Extra Coconut for rolling

Method:

Place all ingredients into a blender.

Blend until all ingredients are combined.

Roll combined ingredients into small balls then roll in coconut.

Leave to rest in the fridge.

Enjoy! (Seriously…. that’s it…. you’re done!)

(Makes approx. 22 balls)
